Another Yummy Muffin

Here is a great fall muffin that's both healthy and scrumptious. Enjoy!

1 cup almond flour
1 cup pumpkin
2 eggs
1/4 cup almond butter
1/4 cup honey
1t baking powder
1t cinnamon
1/2 t pumpkin pie spice
1/4 t salt
3/4 cup chopped walnuts

No Hydrogenated Vegetable Oil In These!


  1. Is almond flour readily available anywhere?

    1. I've found it at Walmart. You can make your own also. Place a cup or two of raw almonds in the food processor, pulse for 30 seconds, pause do again and maybe again. Be careful that you don't blend too much and end up with almond butter. This can give you about a 50% saving. ( I haven't made my own yet but will be doing so this week)
